1 T. olive oil
1 green onion, chopped with green tops
2 medium Crimini mushrooms, sliced
1 small zucchini, sliced into 1/4” thick rounds
1 small hot chili pepper (optional)
2 garlic cloves, minced
1 t. fresh rosemary, finely chopped
1/2 t. sea salt
1 slicing tomato, cut into 1/4” thick rounds
4 large eggs
2 oz. smoked Gouda cheese, grated
Preheat oven to 400 degrees. Beat eggs and set aside. Heat olive oil in a 9 or 10 inch ovenproof skillet over medium-high heat. Add onion, mushrooms, zucchini, and chili pepper and saute for about 5 minutes. Add garlic and continue cooking for another 2 to 3 minutes, until vegetables are tender. Stir in rosemary and salt. Remove from heat. Spread the vegetables evenly in a single layer and cover with the tomato slices. Pour the eggs over the vegetables and sprinkle with the cheese. Pepper to taste. Bake for 15 to 20 minutes, until eggs are set and edges are beginning to brown. Makes 2 to 3 servings.
